the way i have been taught is to get a container like a small esky that has a bung at kne end throw down a layer of rock salt put you cut fillets of fish skin down followed by another layer of salt repeat the process until you have run out of bait to salt finaly finishing with a top layer of salt make sure the esky or container that has a tap or bung has a air tight fitting lid
